This last week I made several kinds of cookies and thought they reminded me of granola, even though there are no grains in them.

Here’s how-

Apricot Granola Cookies

  • 1 C. chopped dried org. apricots
  • juice of 1/2 of one lemon (soak dried apricots 30 min.)
  • 1 1/2 C. almonds (process in food processor till fine)
  • 1/2 C. sunflower seeds (grind in coffee grinder till flour)
  • 1/2 C. sunflower seeds
  • 1 C. raisins (process in food processor)

Now put apricots into processor till pasty. Mix all ingredients together. I do this by hand. Then shape as desired and freeze. They are ready to eat. We eat them icy cold right from the freezer. I like to roll some in organic coconut that I dry myself in the dehydrator. Some, I added chopped dried bananas to and others I left out the apricots and substituted chopped dried dates that I soaked in lemon juice.  They were all delicious and no regrets. Enjoy! 🙂

  1. I made these cookies from this recipe that you posted on here, but I had a hard time finding apricots at Kroger. The ones that they had were in a plastic box (fruit & vegetable area) and it was too much money. I had to buy the kind that was in a can. :-/

    These cookies are so yummy and I had fun making them! Who would have thought I would be eating cookies like these?! lol! Oh, man! I feel full after eating one cookie. I can see why you put lemon juice with apricots, it’s because it brings out the flavor and makes it smell really good.

    I’m curious on how you made your own peanut butter. I think I saw you made your own peanut butter before, lol. 😀

    • Natty, Sorry I didnt give more information. I buy the apricots already dried and organic from a food co-op real cheap. It is Country Life Foods from Pulman Mi. They have a web site but I buy them locally from a lady near by and we order food from the club once a month. It is really economical. I get all my organic dried fruit and nuts from them as well as my raw almond butter. I am always mixing things together coming up with new creations. Today I am having some kale chips. They are so good too.

    No problem! It’s ok, lol! 🙂 That’s awesome that you are able to buy dry and organic food for real cheap. I will try to look for that website and see what I can find on there. I wished there were healthier food stores out here.

    I never had kale chips before. That sounds good to me!
